To make these easy cookies into sandwich cookies, skip the chocolate chips and prepare as directed. Once completely cool, fill with your favorite Cream Cheese Frosting.
While they’re not from scratch, I love these red velvet cookies because they’re something I can literally whip up in minutes! I just made 2 batches for my daughter to take to school for her birthday and it took under 30 minutes total!!
In fact, cake mix cookies are the perfect dessert to bring along to any event. Not only are they easy, they’re soft and delicious and everyone always loves them!
Oh, and I should mention, these Red Velvet Cookies need just one bowl. I’m a huge fan of anything that needs just one bowl (like these Watergate Cookies or even my favorite 2 Ingredient Apple Pie Dumplings). Anytime I can have an amazing dessert without a million dishes to make my kids wash, I’m a happy girl.
I have used a combination of mini and regular white chocolate chips but either works perfectly fine in this recipe!
