We all know how heavenly Chocolate and Peanut Butter are together, whether it’s our favorite no bake Peanut Butter Lasagna, traditional peanut butter cups or even good ol’ fudgy Peanut Butter Fudge Brownies!
Since most of us have had rocky road ice cream, we know how amazing this flavor combo is and it’s just as awesome made into fudgy little bites.
A chocolatey base, fluffy marshmallows and nuts create an irresistible concoction!
This holiday season, Rocky Road makes the perfect sweet treat to gift to teachers and coaches or the host of a holiday party!
If you need a quick recipe, this no bake rocky road recipe doesn’t require the oven so it’s quick to make and keep a batch on hand to serve friends as they pop over and spread some holiday cheer!
The problem will be keeping your family away from it long enough to actually serve to guests! I know my pan has already been devoured and they are waiting for a refill!
What is in Rocky Road?
The ingredients you need to make rocky road are pretty simple and you very likely already have them on hand!
I use a combination of chocolate, peanut butter, nuts and marshmallows.
I usually choose pecans or walnuts but you can use whatever nuts you like best (or have on hand)!
Did you know that Rocky Road recipes vary by location? Here in North America we add nuts and marshmallows however, in Australia, Rocky Road often has cherries and coconut while the UK version is loaded with cookie bits!
To be honest, they all sound totally delicious to me (and inspire me to try out different combinations)!
You can make simple modifications to this recipe to personalize it to your preferences or even create a more gourmet rocky road!
You can use colored marshmallows instead of white, add raisins or dried cherries, chocolate chips or cereal bits.
Use your imagination and your family’s favorites to create a dessert square everyone will love!
How do you make a Rocky Road?
Rocky Road is a simple and easy candy that doesn’t require lots of attention. No messing around with candy thermometers or worrying about temperatures.
If you’ve never made Rocky Road, this simple fudge-like treat is going to become a regular on your cookie tray!
I use a shallow pan and melt the peanut butter and chocolate together over low heat.
Once melted, I remove it from the heat and let it cool slightly. You really want the marshmallows to hold their shape (and not melt into the mixture)!
After a few minutes, I stir the remaining ingredients into the mixture and spread it into a foil pan.
Once cooled, I love to cut these delectable little treats into bite sized squares. They’re very rich so you’ll want to make sure you cut them nice and small.
While it’s the perfect easy treat to put out any time of year, it also makes for an amazing homemade holiday treat!
They’re perfect to grab for a quick sweet treat or to wrap in a seasonal gift box and gift as a quick last minute hostess gift!
Whether you want to delight your kids after school today with a delicious treat, or you need another dessert square to round out your holiday dessert tray, choose this Easy Rocky Road recipe. So quick and scrumptious, you will love it and make it often!
